Aaron,
Not sure of all your requirements, but you do not have to run sendmail in
"daemon" (-d) mode to use as your mta.

You could start sendmail in queue mode only (sendmail -q1h) or run from cron
every so often if you wanted to make sure any messages in mqueue were
delivered but not accept incoming SMTP connections.  See sendmail man pages
or http://www.sendmail.org for more info.
